Ground Beef Recipe
Cheesy Beef Potatoes
Baked russets split open and loaded with seasoned ground beef and melty cheddar — a whole dinner in one potato.
Made with Reynolds Ranch Ground Beef · Bake 45–60 min, then 5 more
Ingredients
- 4 large russet potatoes
- 1 lb Reynolds Ranch ground beef
- 1 small onion, diced
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1½ cups shredded cheddar cheese
- Sour cream
- Green onions, sliced
- Bacon bits, optional
Instructions
- 01Preheat the oven to 425°F.
- 02Scrub the potatoes, pat them dry, and poke each one several times with a fork. Rub with a little olive oil and sprinkle with salt.
- 03Bake directly on the oven rack for 45–60 minutes, or until tender when pierced with a fork.
- 04While the potatoes bake, brown the ground beef and onion in a skillet. Season with garlic powder, paprika, salt, and pepper.
- 05Slice each potato open and fluff the inside with a fork.
- 06Load them up with the seasoned beef and plenty of cheddar cheese.
- 07Return to the oven for 5 minutes, or until the cheese is melted.
- 08Finish with sour cream, green onions, and bacon if desired.
Serving suggestion
Bake the potatoes right on the rack so the skins turn crisp — then set out the sour cream, green onions, and bacon so everyone builds their own.
