Cozy Beef Pot Pie
A creamy beef and vegetable filling baked under a golden crust — one dish that fills the whole house with dinner.
Made with Reynolds Ranch Beef Stew Meat · Bake 30–35 min
Ingredients
- 2 lbs Reynolds Ranch Beef stew meat, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 medium potatoes, peeled and diced
- 1 cup frozen peas
- 3 tbsp butter
- 3 tbsp all-purpose flour
- 2 cups beef broth
- ½ cup milk
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 package refrigerated pie crusts
Instructions
- 01Preheat the oven to 400°F.
- 02Season the beef with salt and pepper. Brown it in the olive oil in a large skillet or Dutch oven. Remove and set aside.
- 03Add the butter and onion to the pan. Cook until softened, then add the garlic.
- 04Sprinkle in the flour and stir for 1–2 minutes.
- 05Slowly whisk in the beef broth and milk until smooth and thickened.
- 06Add the beef, carrots, potatoes, peas, and thyme. Simmer for about 8–10 minutes, until the vegetables begin to soften.
- 07Pour the filling into a pie dish and top with the pie crust. Cut a few slits in the top for ventilation.
- 08Bake for 30–35 minutes, until the crust is golden brown and the filling is bubbling.
- 09Let it rest for 10 minutes before serving.
Serving suggestion
Give it the full 10-minute rest — the filling sets up as it cools, so the first scoop stays creamy instead of running over the crust.
