Green Enchiladas
Beef-and-cheese enchiladas smothered in a creamy green chili and jalapeño cheese sauce.
Made with Reynolds Ranch Ground Beef · Serves 6 · Bake 30 min
Ingredients
- 1 lb Reynolds Ranch Ground Beef
- 1 tsp salt
- 2 cloves garlic, chopped
- 1 medium onion, chopped
- 1 cup cheese, grated
- 1 package tortillas (flour or corn)
- Sauce: 1 can cream of chicken soup
- Sauce: ¾ cup milk
- Sauce: 4 oz Velveeta Jalapeño cheese
- Sauce: ½ red bell pepper, chopped
- Sauce: 1 package Green Onion Dip Mix
- Sauce: 1 can chopped green chilies
Instructions
- 01Cook the beef: brown the ground beef with the salt, garlic, and onion. Drain off excess grease.
- 02Add the cheese: set the beef aside and scatter the grated cheese over the hot meat to melt, then mix well.
- 03Prepare the tortillas: warm them between two damp paper towels in the microwave, just long enough to make them pliable.
- 04Fill & roll: fill each tortilla with the meat mixture, roll up, and place seam-side down in a casserole dish.
- 05Make the cheese sauce: in a glass bowl, combine the cream of chicken soup, milk, Velveeta Jalapeño cheese, bell pepper, Green Onion Dip Mix, and green chilies. Microwave until the cheese melts, then stir well.
- 06Bake: pour the cheese sauce over the enchiladas, cover with foil, and bake at 350°F for 30 minutes.
