Steakhouse-Style Bleu Cheese Compound Butter

A simple bleu cheese butter log that melts slowly over a resting steak for a true steakhouse finish.

Finishing butter for Reynolds Ranch steaks · Makes about 1 log

Ingredients

  • 4 tablespoons unsalted butter, softened
  • 2-3 tablespoons bleu cheese crumbles
  • 1/2 teaspoon brown spicy mustard
  • 2-3 drops Worcestershire sauce
  • Freshly cracked black pepper, to taste
  • Optional: a tiny pinch of minced garlic or a few chopped herbs (like chives)

Instructions

  1. 01Let the butter soften to room temperature.
  2. 02Mash together the butter, bleu cheese, mustard, Worcestershire, and black pepper with a fork.
  3. 03Mix until just combined - you want a few little chunks of bleu cheese remaining.
  4. 04Spoon onto plastic wrap, roll into a log, and refrigerate until firm (or freeze for longer storage).
  5. 05For grilled steaks, cut a 1/2-inch thick medallion and place it on the steak while it rests for 5-10 minutes. The butter slowly melts over the hot steak without completely disappearing, creating that steakhouse finish.

Serving suggestion

We skipped the garlic and herbs - the simpler version really lets the steak shine.
